- Chili Dog Chili! (as shown on 30 Minutes Meals with Rachael Ray) – prepare this with corn bread and when you take a bite of the chili with a bite of the corn bread; it’s like eating a chili dog and a corn dog at the same time. Mmmmmmmm. This should feed a family of four for approximately $12. (Certainly less costly and far more healthy than a trip to the golden arches). 1 pkg. hot dogs 1 lb. lean ground beef 1 can kidney beans 2 Tbs. chili powder 1 Tbs. cumin 1 med. onion (chopped) 2 med. jalapeno’s (chopped – discard seeds unless you like more heat in your chili) 2 garlic cloves (finely chopped) 1 28 oz. can diced tomatoes 1 32 oz. can beef broth 1 box corn bread mix Cut hot dogs in bite-size pieces and brown them then set aside. Brown the ground beef and drain fat. Add onion, jalapeno, chili powder, cumin, and garlic. Cook till onions are somewhat soft. Now mix all ingredients in a stock pot and simmer for 20-30 minutes. While Chili Dog Chili is simmering, prepare corn bread as directed on the box. Both should be done cooking and ready to serve at the same time.
